My apologies for being ignorant. Can someone please explain why they are collecting water and from where? I understand that they are filtering the water of chametz, but what is the inyan to collect the water. Thank you
They are leaving the water out overnight (covered for cleanliness). It becomes cooler that way. That water is used for matza baking. Cooler water slows leavening process.
